A Cart Built on Conviction.

The coffee cart format was not a compromise — it was a deliberate choice to bring specialty coffee directly to people in the moments that matter most. The cart allows MAWA to show up exactly where intentional experiences are being created: weddings, corporate gatherings, private events where every detail is considered. Every element of the setup, the menu, and the service reflects the same philosophy as the coffee itself — nothing is there without reason.

GFN Coffee is MAWA's local roaster partner — and the relationship is a true collaboration built on a shared, deep focus on origin and processing, not simply a supplier arrangement. GFN Coffee is the source of every bean MAWA serves, chosen because their roasting philosophy aligns directly with MAWA's commitment to letting natural flavors lead. Together, they approach each origin selection as a joint decision rooted in what's exceptional right now.

THE SOURCING

Following the Harvest.

MAWA rotates single-origin beans sourced from specific farms in Colombia, El Salvador, Ethiopia, and other origins, following harvest cycles year-round to ensure every bean served is at its peak. This is not a fixed menu — it moves with the seasons and with what's best right now.

Colombia

Stone fruit, caramel sweetness, and a clean, balanced body from high-altitude farms in the Huila and Nariño regions. Colombian beans offer a clarity that rewards attention.

El Salvador

Delicate florals and soft citrus brightness, often processed with care to highlight the bean's natural sweetness. A quieter cup that opens up as it cools.

Ethiopia

Vivid berry notes, jasmine, and a tea-like complexity — the ancestral home of coffee, and it shows. Ethiopian lots tend to surprise even seasoned palates.

Rotating Origin

The fourth slot changes with the harvest cycle, following whatever is at peak quality right now. Ask your barista what's on rotation today — it's always worth the conversation.

The MAWA menu is deliberately restrained — espresso-based drinks, pour overs, loose leaf teas, and matcha. Not a long list. Not a customization matrix. Just a short selection of things made extraordinarily well, where the quality of the bean and the skill of the preparation are the only ingredients that matter.
